Deep-Dish Pear Pie

1 cup sifted all-purpose flour

½ teaspoon salt

1/3 cup shortening

¼ cup grated cheddar cheese

Sift flour and salt together; cut in shortening until mixture resembles coasrse meal.  Mix in cheese; stir in 1 tablespoon water at a time until pastry holds together.  Chill in refrigerator until ready to use.  Preheat over to 350 degrees.

Pear Filling

2 pounds pears

1 teaspoon lemon juice

3 teaspoon flour

1 cup sugar

dash of salt

½ teaspoon cinnamon

½ teaspoon nutmeg

1 teaspoon butter

Peel pears; cut in halves and core.  Arrange in deep pie plate.  Sprinkle with lemon juice.  Mix flour, sugar, salt, cinnamon and nutmeg together; sprinkle over pears.  Dot with butter.  Roll pastry in a circle to fit over pie plate.  Place over pears; crimp pastry to edge of pie plate.  Slash in several places.  Bake for 30 to 40 minutes.  Serve with cream, if desired.  Yield: 6 servings.
