Grapefruit in shells

2 grapefruit

2 3-ounce packages lemon gelatin

1 teaspoon flour

3 teaspoon sugar

1 egg yolk, beaten

juice of 1 lemon

1/3 coup pineapple juice

4 marshmallows

½ cup cream, whipped

1/3 chopped nuts

Halve grapefruit.  Scoop out pulp and juice; reserve.  Remove membrane, leaving smooth shell.  Dissolve gelatin in ¾ cup boiling water.  Stir in 3 ¼ cups grapefruit pulp and juice; pour into grapefruit shells.  Chill until set.  Combine flour, sugar, egg yolk, lemon and pineapple juices in double boiler; cook over simmering water until thickened, stirring constantly.  Add marshmallows; stir until melted.  Cool, fold in whipped cream and nuts.  Serve over gelatin in shell.  Yield: 4 servings.
