Grapefruit Supreme

3 large grapefruit

sugar

1/8 teaspoon salt

3 egg whites ½ teaspoon vanilla

1 pint vanilla ice cream

Halve grapefruit; remove core.  Cut around each section, loosening fruit form membrane.  Sprinkle with sugar; chill.  Preheat oven to 500 degrees.  Add salt to egg whites gradually, beating until stiff and glossy; add vanilla.  Remove grapefruit halves from refrigerator; place heaping spoonful of ice cream in center of each half.  Cover with meringue.  Place in oven for about 1 minute or until browned lightly.  Serve at once.  Yield: 6 servings.
