¾ cup softened butter
½ cup sifted confectioners’ sugar
1 cup all-purpose flour
½ cup cornstarch
4 teaspoons grated orange rind
1 teaspoon vanilla extract
¼ cup granulated sugar
In a large bowl, cream butter and confectioners’ sugar. Add flour, cornstarch, orange rind, and vanilla extract; mix well. Cover bowl and chill dough one hour. Roll dough into a cylindrical shape, ten inches in length. Wrap in waxed paper and then in aluminum foil. Freeze at least two hours. Remove wrappings and roll dough in granulated sugar. Cut into one-quarter inch slices. Place two inches apart on lightly buttered backing sheets. Bake in a preheated 375 degree oven for ten minutes.
