Sweet Potatoes in Orange Cups

5 oranges
2 cups mashed sweet potatoes or 1 sixteen-ounce can sweet potatoes
4 tablespoons butter
1/2 cup brown sugar
1/4 cup white sugar
1/4 teaspoon nutmeg
2 teaspoons cinnamon
1/4 teaspoon ground cloves
2 teaspoons vanilla extract
1/4 cup orange juice
1/4 cup milk
4 eggs
1/2 cup chopped pecans
10 large marshmallows

Cut oranges in half and remove pulp and white membrane. Reserve one-quarter cup juice. Scrub sweet potatoes and boil for 30 minutes or until tender. Peel potatoes and mash well. Add butter, sugars, spices, vanilla extract, orange juice and milk to hot potatoes. Add the eggs one at a time, mixing well after each addition. Stir in pecans. Fill orange cups with potato mixture, and place upright in a 9 x 13 inch pan. If necessary, crumble aluminum foil and place between oranges to keep them upright. Oranges may be refrigerated at this point for one to two days. When ready to bake, bring oranges to room temperture, and bake in a preheated 350 degree oven for 30 minutes. Remove from oven and place a marshmallow in the center of orange cup. Return to oven and bake about five more minutes until marshmallow is soft and lightly browned. Any of the following ingredients may be added to the potato mixture as a variation: one cup raisins, one cup drained, crushed pineapple, or two teaspoons freshly grated lemon zest.
